Getting Back to Normal

The past two days have been rough. Something happened on Sunday that I've had a hard time dealing with. I am so thankful for my wonderful roommates. They have been so supportive and helpful. I am truly blessed to have made such wonderful friends here. And no worries, I am fine and safe.
Yesterday I was given the day off from school and spent it at home. First I watched How To Train Your Dragon and Kung Fu Panda. How To Train Your Dragon is one of my new favorite movies. I love it. I almost started another movie but then remembered I had some International Relations homework due online so I finished that first.
After finishing my homework, I was in the mood to get things done. I did a load of laundry and then cleaned up my apartment a little. I swept the whole house, did the dishes, took out the trash, and organized my stuff. Then I talked to my wonderful mom on the phone for awhile. I miss her so much. Only 20 days! I have some apples that were going bad so I asked her how to make applesauce. She told me and it was so much easier than I thought it would be. So I made some applesauce and it is so good! I will definitely be doing that again.
It was nice to get back to my normal daily routine today. I went to both of my classes and in between classes I met with my Spanish group to film part of our telenovela. After International Relations, I met with my friend Simone to finish our Spanish Life and Culture project. Once I got home, I got a phone call from my dad. He called to check in on my and see how I was doing. Though it was a short conversation, it was nice to talk to him. I miss him so much. Only 20 days! Then I went grocery shopping and now I'm home waiting for my chicken to finish cooking. This is the third time I've bought a whole chicken and cooked it. Having it all cooked is so nice. All I have to do is heat it up, steam some veggies, and then I have an easy full, delicious meal.
Side-note about the chicken. When buying a whole chicken here, they don't have frozen chickens or ones all prepared for you. You have to ask for them to prepare you one. And by prepare, I mean cut off the head and take out the guts. The first time I got a chicken, the butcher asked me if I wanted it cut. I said no thank you and that I would cut it at home. He then gave me the weirdest look ever. I looked down at the chicken in his hands and realized why. I saw the head and immediately asked him to cut it for me. In the display case, the have the heads tucked under the chickens so I didn't see that it still had its head.
I took a break from writing this post to finish making dinner. The chicken was almost done so I prepared the rest of my dinner. While getting out some zucchini and onion to steam, Anavi came into the kitchen. Since I made a whole chicken, I asked if she wanted some. She did so I got some more veggies out and made her some of those too. So instead of my planned dinner for one, I made dinner for two.

Something that brightened my day today was the mail I got. I got a beautiful drawing from my cousin Penny. It is now on my fridge. It makes me smile looking at it. I got a card from my aunt, uncle, and cousins. I can't wait to see them once I get home! The last, but not the least, card I got was from my wonderful Grammie and Poppop. I love them both so much. They gave me probably the best brittle I have ever eaten. Go buy some. It is sooooooo good!
